A few other things commonly missed...
Getting quality monitors is only part of the equation. The room your in will radically effect what sounds you hear and in an untreated room it'll be for the worse. Here are a few informative sites run by acoustics companies that can help you tune your room to optimize your mixing.

Theatrical films and DVDs are not mixed to "a number" but rather mixed in a calibrated stage (TV is it's own animal). Below is a site that runs you through proper calibration procedure and supplies you with the tones as well. And if you're looking to mix for a theatrical release be sure to check out the Dolby Mix stage requirements for surround post.

Some highly recommended books on post film sound...
Dialog Editing for Motion Pictures: A Guide to the Invisible Art
By: John Purcell

The Foley Grail: The Art of Performing Sound for Film, Games, and Animation
By: Vanessa Theme Ament

The Sound Effects Bible: How to Create and Record Hollywood Style Sound Effects
By: Ric Viers

Sound Design: The Expressive Power of Music, Voice and Sound Effects in Cinema
By: David Sonnenschein

Practical Art of Motion Picture Sound
By: David Lewis Yewdall

There are many more books that focus on the entire process of sound from pre to post production found elsewhere on this site, but the above books represents the best information I currently know of for helping out in the details of post sound.

Well I can keep adding posts to keep it toward the top but a little moderator action could do it better...

Stickie would save so much time! Who do people talk to since the moderator seems not to be following this thread.

Added a thread on building contact mics from Radioshack Piezo buzzers.

Thanks Brad for the link.

Lots of information, but I didn't find anything on actual equipment to use to record a dialogue between actors if being on budget.. basically just want to record a good demo reel.. what equipment suggestions would be?

That would be in the stickies that focus on production audio. This is more intended for post production, after the dialog is already recorded (excluding ADR). There are some great articles comparing different shotgun and lav mics in the stickies section, so you should definitely check those out.
