Calibrating a light meter to video

I have just gone back to school for film production. My background is in film and I am trying to transfer some of my process to working with video.

I was wondering if anyone had ideas about how to use my light meters with video. How do you rate the camera (ISO/ASA)?

I thought that I could shoot a greyscale card with a waveform monitor and then calibrate to the middle grey, but most of the shoots I've been on there isn't a waveform monitor. Anyone have any ideas on how to do it without a monitor? Thanks.
