Bringing a knife to a gunfight

Hey all! I'm in the process of fundraising for an action film, and assuming it gets funded, I'll be on the lookout for a realistic retractable knife for one of my fight scenes. I know there are a lot of action filmmakers that hang out on DVXuser, so I was curious what everyone's experience has been with prop knives. (Just as an aside, the $10 spring ones won't work, and a rubber one that bends won't work either--need something that gives the impression of really being STABBED.)
 
As a side note, you'll probably want someone with a martial arts background to choreograph and supervise the fights. Someone with a police or military background might work too.
 
Thanks for the help guys! Looks like one of the suggested sites has a retractable kitchen knife which should work. It won't be a hard stab, just needs to look like the knife is going in, and we have a pretty awesome stunt/fight coordinator on board :)
