black and white everything but one color

so using FCP how do i black and white everything but one color like in sin city? actually i want to turn down the other colors, not completely black and white them. i tried to look it up but i dont know what is called to do this so didnt have much luck
 
use three-way color correct and and turn saturation as far down as you want, then at the bottom choose "limit effect". choose the color you want to isolate and then invert selection.
 
....and this is where having cleanest possible source with as little compression as possible makes a huge difference. It isn't that film tools are better, just that they have better quality source typically.
 
A tip: Since isolating a color (Pleasantville Effect) is a Secondary CC operation, if the color I want to isolate is weird and hard to wrangle, I first do a Primary CC operation to bring out that color stronger. Then do the color isolation. With bad footage it makes isolating a color much easier.
