Any preference for using two mono tracks or one stereo track when I plug into the left channel of my dxa slr pro when using a DSLR ?
If I use stereo I just "fill right" in post and I have stereo left and right - is this the correct way to record to a DSLR ?

Back in the bad old days of analog tape, we would record a single source on BOTH channels just for mechanical redundancy. It gave us a bit of extra safety in case of a problem with a tape edge wrinkle or drop-out, etc.
But in modern days of digital recording to solid-state cards, etc. none of those techniques apply. Especially if you know what you are doing in post-production to properly handle variations of audio tracks.

The better way is to just pan the mono track center.

Also you are not ending up with stereo, it's still mono, it is just in both speakers. Panning center does the same thing.
