This is probably a dumb question. When doing a mono recording with an external mic is it common practice to plug into ch. 2 and have ch.1 switched to ch. 2 also so you can monitor the audio with headphones in both ears?

not really dumb, and yes it is common. with that technique you generally set a hot and a cold channel (loud and soft) - that way if you get an unexpectedly loud sound the softer channel is a safety copy against distortion.
