B&W People in a Color World

Ok, can anyone please tell me the best possible way to create a B&W person in a color enviroment, ie. Pleasant Ville.  Im guessing having the image doubled then adding a traveling matte in After Effects to the shape of the person on the above image and disaturating it.  I havn't yet tried it, but I'm guessing its going to look very strange around the edges, probably flicker.  I would say green screen, but we dont have the access nor do the traveling shots allow.
Does anyone out there have the answer!  Again I want it to look as natural as possible. (Besides the no color thing)

Thats a tricky one, you might run some test. To think of it may depend on the clothing that the person is wearing too or makeup that is applied, you "CAN" theoretically of course, Chroma any color. But then your skin tones would be off. Hmm... I'll get back to you.

I think adding a matte to the shape of the person is the best thing you can do even if it's going to be long!

Beizer masks...cut the objects frame by frame then add the B&W effect on the clip with the Beizer mask.

If you want to see an example of what you're talking about (even more complex, as the character also distorts slightly as he walks around) Look for the Crystal Method video - Just a little bit slow
