1. How do I turn off the on camera mike
2. How do I make it so the external mike I'm plugging into the XLR input will be the only mike recording AND will record simulatneously on both channels. ?

I will go out on a limb and make the assumption that you are using a DVX.

If so, then connect the external source only to "INPUT 2". If it is a mic, then set the cameras "INPUT 2" selector to "MIC" not "LINE". If you are using an external preamplifier/mixer, then you would choose "LINE". Next, set the "CH 1 SELECT" and "CH 2 SELECT" both to "INPUT 2". Adjust each channels level as you like, either the same, or what I prefer is to set one for low level situations and the other to high level, then you can choose the appropriate one in post, effectively giving you more latitude with different audio situations (like when you are covering dialog in a two shot and one actor is noticeably louder than the other).
