So I've been meaning to get a decent boom kit for a while now and I was eyeing the $600 audiotechnica kit from b&h.
However, this Christmas I got a ton of amazon money and would like to use it towards that. Could anyone point me in the right direction for what I should grab from there since they don't have any kits available. I'd still like to keep it in the $600 range.

I would find and price what you want on BandH, then purchase everything on Amazon. At least that's what I did with my Lowel light kit and I ended up saving about $200 in a $900 total purchase.
