Audio Editing Mono vs Stereo Vs 5.1

What format do you use? Mono, Stereo, 5.1? I assume no one really uses Mono, but what do you use and what deciding factor helped you decide what would be best for you (as a editor) and your project?

Any tips on audio editing would be appreciated as well.

Is working with 5.1 very difficult? I know 5.1 would be the best choice, but how difficult is it in comparison to working in stereo?
