Aperture question for adapter users. (EOS problem)

Question for adapter users: How often do you actually change aperture on your 35mm lens once it is attached?

My understanding is that the aperture adjustments on the 35mm lens are primarily to manage DOF of the image, while the exposure can be managed by internal camera aperture, internal ND, and external filters.

I have a Canon 40D and a bunch of new EF lenses (not the undersized EF-S). I would love to use them but understand the difficulty in changing the aperture on these lenses since it can not be done manually. (There is a cumbersome workaround solution discussed here)

Since I don't yet have an adapter to play with, I am wondering how often you change aperture on your lens once you are set up. In other words, if I know I want to use my 50mm for a two foot DOF area for an interview, can I just use a DOF calculator before i even set up (I need to be 10ft away at f4), and then manage the actual exposure levels in camera ? (behind the DOF adapter).

Another level of complication for me is that I am not doing 'film' shooting, I am doing more documentary shooting.

I have dug around to find the solutions I could but I thought it would be good to have an 'EOS solution thread.'

Hope that makes sense. Any input is appreciated.

UPDATE: I found this cool setup which uses a Novoflex EOS Retro. Pretty cool.

I posted a follow up to this question in the Still Photo section. There may be some more help there.
