Advice on shooting footage of artist creating digital artwork

I want to shoot time lapse video or just sped up video of an over the shoulder shot of somebody sitting at a Microsoft Surface Studio computer and digitally drawing/painting artwork with a stylus. The final piece will end up being no more than 10 seconds maybe. I'm looking for some thoughts on the best way to go about doing this. I plan to setup a Sony A7S2 on a tripod behind the person sitting at the computer. The artist will have already drawn/painted the artwork in Adobe Photoshop using lots of layers in advance of the shoot, and I intend to find some way to turn the layers on during the shoot to somehow make it appear that the artist is creating the artwork during the shoot.

1. Any thoughts on the best way to approach shooting this? Should I just shot at the highest frame rate 120fps 1080p and speed it up later?
2. Thoughts on how I can somehow turn on different layers during the shoot to make it seem like the artist is drawing it all during the shoot and make it seem seemless as it is being done?
3. Any other thoughts or advice on doing this?

Thanks.

Have them use an eraser tool on the artwork and then reverse the footage in post?

Recording in real time would be the safest option, I'd think, but you definitely don't need a high frame rate. In fact, if you're speeding up the footage significantly, I'd go with 12fps or at least just 24fps if that option isn't there.

To make a timelaps video you need to shoot at a very low framerate.
