A Newbie Question on Microphone Choice in a Constant Noise Environment

Thank you for suggesting interesting options, Imamacuser. I was considering to get a Yamaha, which I use at my office. But these look interesting. I will definitely explore them.

Following many of your advice, I will experiment with a few things (buy a couple of microphones--ear & lav, and borrow an audio interface from IT). Thank you very much for your help, everyone!
