When shooting on tripod stabilization on or off? When shooting with a gimbal on or off? And if I read correctly turning off stabilization at the lens disables all stabilization?

Client wants the raw footage. What is the best mode out of the camera. I don't want to hand off flat footage because I don't know how they are going to edit or color correct.
