...I Really Am Baffled

Now the shot that I am talking about is when He (Kanye West) goes into the Airport's Bathroom to clean the Mustard stain off of his shirt...

...so the Infamous Mirror Shot, I thought maybe the Camera guy could be to the side of him cause its easy to erase with such white space, but it doesn't look like that is the case, cause he is looking straight forward, and when he bring his hands up, I am pretty sure they just filmed it twice to get that effect...but I just am curious how they had it so straight on like that...

Yep, probably just shooting a greenscreen with someone doing the hands in front of the camera, or if they were complicated, there isn't a mirror, and Kanye is just on the opposite side of a duplicate set. If you pause the video at different points, you'll see that the hands aren't in exactly the same position.

before reading your post I thought of the same exact thing...he is just on the other side of the sink and there is no mirror. Goodcall, man.
 
I watched an MTV "Making The Video" on this one a while back, and they first did a shot of Kanye performing, with the camera where the mirror was, and then they did a shot of the "mirror", which was then covered up with green cloth, and they used a "hand double" to re-create Kanye's hand motions.
 
if you look carefully they don't look exactly 100% the same.
His hand movements are close but not exact.
They shot the POV shot and then matted kanye back into a clean plate. I also wouldn't doubt if that is a motion controlled camera made to look handheld/POV. Kanye boasts he spends $1million on his videos so multipass motion control is not out of that budget.
