Rookie question: stereo or mono?

Just starting trying to make some better audio.
Do you record stereo or mono?
With the Hvx i put the mike in one input and record the same input both on channel 1 and 2 so i have stereo.
Now i'm playing with a Mkh 416T and a Zoom h4 off camera and can only record mono, thinking to split the signal in post.
But the question is, how do you record with pro tools like a Tascam hdp2 or with a 302, stereo or mono?

Hope the question is english understandable...
 
There is an old semi useful rule of thumb for FX recording, "If it's bigger than your head it's stereo". Dialog is always mono.

So, shooting movies, the dialogue recorded mono is then splitted into two channels or stays in one (from where the voice is coming?)

No, dialogue stays mono. You can always pan it if needed, but generally it just comes right up the center.
 
Films shown in theatres have three speakers behind the screen. Dialog is in the center speaker and VERY RARELY moved off dead center. Basically because how far from center seems "correct" depends on where your sitting also it would be hard to make dialog coming from the left speaker be understandable to folks on the right side with out making it too loud on the left. So dialog is in the center, FX and music are mostly in the L&R and not much if at all in the center, Foley tends to be where the dialog is so also center. In most films a little reverbed L/R FX is sent to the surrounds and Music often comes in in 5.1 so that will also be in the surrounds.
