Tomorrow i'm going to test out a demo HVX at my dealer & i'm going bring along a 200GB USB 2.0 hard drive to store the footage I shoot with it to take home.

It's been formatted NTFS & has about 50GB of various files on it already (jpegs, avi's etc)

Will I need to format it again before I connect it to the HVX?

You need to format the hard drive via the camera. It needs to be a FireWire hard drive (or a multiple interface hard drive with FireWire) in order to use the camera in FireWire HOST MODE to copy media to the hard drive. Regardless of the hard drive capacity, the camera will format the disk with 15 FAT32 partitions. It's limited in that way.

So you can not connect a USB hard drive into the camera to dump P2 cards, it must be firewire?
That's my understanding and what the manual states. The camera menu gives you the option of {USB Device, 1394 Device, 1394 Host}.

correct me if i'm wrong.... but if the camera menu gives you the option of a USB device, doesn't that mean you can connect a USB hard drive?

No laptop yet at the moment!... but i'm looking closely at one of those cool little 13" Macbooks....

No, that means the camera is operating as a USB DEVICE. In order to write to a hard drive, the camera needs to be a HOST.

Right, it's a device only. So if you have a USB drive that operates as a host, it can control the HVX device and pull the data off its cards. Those USB drives are known as USB On-The-Go, and have a one-button "copy" operation built into them.
