I am booming up a shot-gun mic and feeding it straight into my camera (DVX100B).

I want to 2 tracks of Audio. How do i set it up? (settings on the camera?)

Exactly what Horse said, but in all honesty as your sound skills continue to grow you will want to use 2 mics or more and get used to creating a stereo track out of a mono one. It's best to start to practice early.

I never record to both channels anymore even when I run just a single mic into the camera. It does nothing to enhance your editing and post skills

and phantom means it is running off the camera battery - yes?

because when i switched the input 2 on - audio bars appeared.

thx!

Yep, phantom power means that the camera is supplying the power that the mic needs to function. If you're getting bars, you're good to go.

Can you set the levels/gain different on both channels even though they are taking in audio from the same input? If you can, that would be sweet cause you could run one a bit hotter than the other, then just pick which one worked out better in post after-the-fact.

I am a little confused on these responses so I will ask my own questions to try to get a better understanding.

If I had to use two mics for what ever reason, and simply plugged one in input 1 and the other in input 2, would I get 2 different tracks when editing?

Would I get the same resutl using one mic, plugging it into input 2 and setting both channels to input 2 like mentioned above by Horsefilms?
