I have a Canon XC10, which films in UHD 4:2:2.

If I export the UHD footage as Apple ProRes 4444 XQ 1080p in FCP X, will I end up with a 1080p 12 bit final file?

Technically, as ProRes 4444(XQ) is a 12-bit format vessel, yes, your file will be in 12-bit. On a practical level, since you will be starting with 8-bit UHD 4:2:2 source material, that 12-bit resulting file will be padded out with a lot of zeros. Can't get something from nothing.
