Which are the best CFexpress cards for the c300mk3 shooting 4k Raw? I have the Delkin blacks, which are pretty good, but sometimes the camera stops recording due to buffering issues.

There's an official Canon approved list somewhere, and I think the last time I checked it had SanDisk, Sony, Angelbird and ProGrade.

Not sure which models - because not all "officially" make it, especially depending on the size/speed - but that also doesn't mean some not on there wouldn't work (as you already know with your Delkins).

I used to use Sandisk for everything but would use Sony now, very solid (in general).

I used to shoot full time on the C300 III for nearly 3 years. I always used Sandisk 512 GB Extreme Pro CF Express type B cards. Never dropped a single frame or had a single issue during that entire time with those cards.

Did you shoot 4k raw? I find that most buffering issues happen with that codec.

Great question. I did shoot some raw but to be completely honest my main codec was the xf-avc. But when I did shoot raw, I did not have any issues.
