It's my understanding that posts made in the Cafe do not accumulate

Post counts should update in real time, but posts made in the "cafe" do not count towards your overall post count, so that is probably what you are experiencing (?)

Quality of posts, rather than quantity of posts would be a brilliant internet feature - but sadly I don't think it's been invented. I've never even thought about my post count - if it's important, he can have mine too!
