lol, this would probably be the hardest DIY thing to DIY. But anyway, is there any guides to make your own camera out there?

There's these, 1000FPS HD Cameras going for 100,000$+, I was thinking if your really smart you could build your own really cheap and have it support the lenses you want, maybe dissecting other cameras and using their parts too etc lol

Cameras for even "conventional" frame rates are well beyond the "DIY" scope. People who are capable of building DIY high-speed cameras aren't hanging around in forums like this asking how to do it.
The reason there are no DIY plans published is:
    1) As DOF says, the components are simply not available to DIY people.
    2) The technology is advanced to the point of being "cutting edge". That is why availability is nearly nonexistant and prices are sky-high.
    3) There are many things that require knowledge and skills of sufficient level to produce successful results. The people that have that knowledge and skill already know how to do it, they don't need instructions. And the people who DO need instructions simply aren't capable of doing it. You won't find DIY plans for neurosurgery either, and it takes much simpler technology than building the simplest camera.
Recording audio without metering and monitoring is exactly like framing and focusing without looking at the viewfinder.

If your name is James Cameron then you could DIY, he was in close talks with some manufacturers in the past from what i read and he tested prototypes.

i do not think so. You could plan to dissect a 5D, to get the sensor and build some reading of it.
the problem is you would end up in a monster big like a washing machine, cooled with liquid nitrogen, so , in truth, barely usable in real life.
the biggest problem is these nice parts are usually easily availble but the information about how to use them probably
next to impossible to get. So a lot of reverse engineering will be required.
So in brief, you would be to need a good reverse engineer in micro electronics and software, a good programmer, electronician,
micro mechanics and optics specialist and several years of patience.
well, it looks easier to work at the next mcdonald for the next five years and spare the money.
    or simply rent the camera....?
