I find it inconceivable that Canon would make their own sensor with 8K’s worth of pixels and a faster readout than any previous Canon sensor but not follow up with the software support for 8K video....

You’re better informed than I am about rumours and such. However, I see no reason it wouldn’t have 8K video if it had the pixel count to do it (about 40 megapixels with a 3:2 aspect ratio sensor)....
