I have a colleague who is interested in using the hvx200 for Audio-ONLY recording. The rationale being, less gear to carry on shoots where you want to grab ambient audio, etc.
Anyone know how this can be accomplished without storing video at the same time?

It's going to record video and audio at the same time, period. You can leave the lens cap on, but you still get MXF video files with audio, that's all you can do.

Yep, BenB is correct. An "audio-only" recording option that would save space would be an excellent new feature for a future firmware...
But you get CD quality sound, not professional quality production sound. If you could get at least 24-bit, and a better sample rate, I could see it.

Being that it records 16bit 48k files to tape (only 2 channels though) why not just take a bunch of tapes along and use those for the audio only recordings. It works for me.

Hey, wait! Yes...
I'm 90% sure Final Cut Pro will let you capure only audio.
'Course you need to have a laptop for that, but maybe you already do?
Other NLEs may be allow a similar option.

EDIT - it definitely does have the option to capure audio only, video only, and to select exactly which audio tracks to capture.

For that matter, a "video only" option, for use when recording music videos
or other situations where audio is not needed, would be invaluable - would
increase P2 card capacity by a large percentage.

If you have the ability to record HD (meaning not SD to tape), you can record 4 channels of 16bit/48kHz audio (which IS better than CD quality BTW - CD is 16bit/44.1kHz).
We modded our HVX to use external mics feeding the two internal mic circuits:

So yeah, the HVX can definitely be used as a 4 channel, 16bit/48kHz audio recorder, although not an inexpensive one.

The idea was to carry less gear not more!
I was in the same situation a couple of weeks ago. I was thinking about taking my HHB Portadat along on a shoot to capture ambient sounds of a river and the forrest at night. Instead I just used the HVX with a tape. Sometimes less is more!

Not really - audio takes up a pretty small portion of the bandwidth (1.5 Mbps for each pair out of 25, 50, or 100 Mbps). A bit, but not much.

Sounds like overkill to me. Do you know what $5000 would buy you in terms of professional audio equipment?
You could purchase one of a few options for 2-4 channel portable recorders on the market that give you 48k 24bit - better mic pre's than an HVX and let you record to flash media.
You'd still have money left over to purchase a TOP QUALITY shotgun mics AND a couple of Sennheiser Lav's.
