I've tried it at 1/60, 1/125 and 1/250, and it all looks kinda jittery.
What am I doing wrong?

It's probably just the fast shutter that's throwing you off... takes some time to get used to it. Try it at 1/24 as well.. but sometimes that kind of looks a bit soft with motion blur and all that... You can also
just set it up for 180 degrees or something there abouts..
