In what mode does the HVX have to be in in order to let it play my final cut edit through it to a monitor via the rca connector?

Well, sort of.
You can have the HVX in any mode; obviously the HVX has to match your timeline so if your timeline is 720p, the HVX would need to be in 720/60p mode; if your timeline is 1080 the HVX would need to be in 1080.
In any mode, the HVX passes through an SD signal through its RCA to a standard-def TV. But that signal will be of extremely limited use for any mode other than DV or perhaps DV50. For HD it will be nigh unto useless, but hey, it will still be there...

Will it be better than connecting a monitor via the "monitor connector" on the macbook?

Yes.
Not for resolution but for luma/chroma.

If i was to grade a film only to be shown on one particular TV set, would not using this TV set for grading be the best reference for that particular case.
If yes, how would i set up FCP for this to work the best. I tried hooking up my TV via the HVX last night, but i didn't get a video out on the TV screen, only with the cam set to VCR i could see the P2 menus but not my FCP edit. Could you advice how to make this work. Thank you for taking the time here to explain this to me.
