I was fumbling and changed the set-up settings and now don't remember what they
were originally. Do these settings affect output only or also what's recorded in the
camera?

Long story short: if you use tape, 7.5. For P2, leave it at 0.

I disagree about tape.
The standard for DV or HD is "0" .
Use that unless you have a good reason.
For Beta or VHS it is 7.5
FCP is entirely set -up around "0" black.
On the HVX or DVX changing those settings changes the actual recording. there is no switch for monitoring
This is messy if you are intercutting or shooting with a Beta camera or a professional 2/3" camera recording DV.
The SDX 900 always records at "0" but may add set-up 7.5 as a menu option. Its not well marked on the menu but this only changes the video out for monitoring./
The Sony D-30, 300, and 500 series cameras also have very badly explained meun settings and they differ a bit on some cameras. The menus are on the deck only and you can change both the way it records and whether it adds set-up to the video out for monitoring.
Unfortunately if you see 7.5 on the picture with a waveform there is no way to tell how it is recording other than to check tape in another deck or FCP, unless you feel confident you understand the weird way Sony explains the switches.
Consumer and Pro-sumer cameras are not standardized. check them in FCP to see what they are recording if concerned. i am a nut on this issue and am amazed at how many people don't understand it.
many people record at 7.5 , edit in FCP then finish with the FCP bars that have "0" set-up ,so the pictures may end up looking washed out when looked at on a monitor. others intercut 7.5 and '"0" footage without paying attention.
I've had 2 D500's with opposite set-ups and the owners were wrong about what their cameras were doing.

It's in the 'camera setup' menu but only on the US HVX; 50Hz users don't have to bother with setup.

I keep everything at zero all the time. I can't remember the last time I even dubbed something to a tape that needed setup. The digital age is great. :D
