When capturing live video from the HVX onto a mac w/ final cut pro (basically using the mac as a firestore), can I do all of the variable frame rate stuff? Or do I lose those capabilities because I'm streaming through firewire?

I haven't tried it yet. I would imagine that you can convert the clip with the FRC plug-in. So, it's definitely worth a try.

Would that give me sort sort of frame interpolation, or would it be like actually shooting at a higher frame rate?

Unless I'm mistaken, the variable frame rates are only available in 24pN mode, and currently Native mode is not supported via FireWire.
Nope, you don't need to be in Native mode. I do it all the time. The signal that gets send down the Firewire cable gives a file identical to what gets put on the FS-100. When you record VARIABLE frame rates, dissable the pulldown option when you ingest the files, and once ingested into your project, you will use FCP's DVCPRO-HD Frame Rate Converter tool. It it doesn't show up in your Tool menu, it's on the FCP 5.1 installation DVD. Just drop it into your Plug-ins folder.
