Does the HVX record in a single frame mode so that I can do stop motion?

Ummm...it was only a half hour between your first and second post... I wouldn't really classify it as a dead thread just yet... :)
To answer your question, yes, I believe it will, using the time-lapse mode, you can have it write only a single frame to the P2 card. I'm not 100% sure you can set it to write a single frame every time you hit the record button, though (the time lapse mode writes a single frame every "X" seconds/minutes).

According the manual, under "One-shot recording (ONE-SHOT REC)" on page 47, and "ONE-SHOT TIME" on page 106, you can set the camera to shoot 1, 2, 4, 8, or 16 frames, or 1 second, at a time.
