I set the demo version to 16:9, but my footage was only displayed squeezed. Why?

How was the footage shot? You should be able to duplicate that resolution (or come close) in Edius "project settings". Once selected, it should come into the timeline as full-framed not squeezed.

Depends on what kind of footage it is - many codecs don't have a frame/pixel aspect ratio identifier, so the assumption is that it's square-pixel until the pixel dimensions match a "known" common size.
You can change the clip properties in EDIUS so it gets intepreted with the correct frame aspect ratio.

I should mention... if it's just a particular clip, you can also resize it in the timeline using the Layout function.

It was shot DV in Squeeze Mode.

Either expand it to full frame in the Layout, or change the aspect ratio to 16:9 DV in the Clip Properties.
I would change the clip properties in the Bin.
