How well will the footage from a 5D or a 7D hold up on a larger screen? Any idea?

Well I guess my real question is about resolution. Let say I am a pretty good lighting cameraman and I put everything I've got in the pictures, will I wonder if it might not have been better if I'd forsaken some of the DOF for ....... maybe what I might get from HVX200 or something comparable?

Im pretty sure the resolution will be ok, but just beware of any jello, jaggies, shakies etc... that will be amplified on a larger screen.
I bet the next DVX fest has a lot of 7D films!!

Films have been put out on the big screen shot on DVX and GL2. I'm sure it'll be fine.

There we go... not trying to be rude, I just like specificity.
The real resolution of these cameras is at least a little less than something like the HVX200, but it depends on the situation. The camera looks great if the image doesn't screw up; so you need to learn what screws it up and avoid that. I recommend reading this:

if you haven't already. Assuming you avoid the known situations that cause problems, the image should look much better than an HVX200, including resolution and everything else that makes the image. The key is to just avoid any issues. It's not a big deal if you keep it in mind. And also be aware that, if you do it well enough, most people won't notice an occasional aliasing issue.

Resolution less than HVX200? I was under the impression that DVCPRO HD records at 1440x1080 as opposed to true 1920x1080 for vDSLRs such as the 7d (correct me if im wrong).

That's pixel resolution, I'm referring to resolving power. How much detail it can realistically show.
But none of it matters too much anyway. It'll look great if you shoot it great, these cameras are pretty incredible and really free people up to create.

They'll look more pleasing on a large projected wall or sheet than on your monitor. From my experience, your monitor will show all the imperfections and all the colour contrast and the resolution, but when it's projected it will be downconverted to SD (I'm assuming you've done a deliverable of 720x486 or 720x576 10-bit 4:2:2 on Digibeta tape) and the large screen will have that gauzey dithered holey and the projector will have a dim cinema look to it.
Unless the fest has a proper digital projector and projects 1080p/2k feed(This will show all the imperfections.) I haven't encountered any Festival that did that though! They're all Film reels or Digibeta, and to some extend MiniDV tapes too??
I've done narrative shorts on the Nikon d90 and it holds extremely well.
