I know the maximum amount you can record per clip with the 7D is 12 min... What is the file size of that? Just trying to figure out what's a good enough size (in terms of gigbytes) CF card...

approx. 4 GB. That's why it stops at ~12 min

Data rate is about 5.5MBs if I remember correctly so...
5.5MBs X 60secs X 12mins = 3,960MB or approx 4GB

I wonder if Canon could empower the 7D with the ability to stitch files seamlessly via a firmware update?

Just pop yer handy CF into a linux box and format as ext3, voila 16 terabytes.

The easy solution for them would be to span clips across multiple files when recording reaches the 4GB limit. That's how Panasonic deals with this problem on P2 cards.
Just pop yer handy CF into a linux box and format as ext3, voila 16 terabytes.
I doubt the camera would know what to do with your EXT3 formatted card, though.
