Simplest way: use Broadcast colors FX for the Title clip. Or some off-white like RGB 235/235/235.

Thanks, I'll try that.

Ray,
White titles in DV are rough (I assume you're using DV).
I don't let white titles go above 210 RGB, and try to use a darker outline (stroke in Photoshop) as an aid in antialiasing;
particularly on dark BGs.
Hope this helps.

These are simple titles on a black background created using the titler in Vegas. So any help correcting titles in Vegas is what I should have posted.

You can open up the title menu, click on the properties tab and change the numerical settings for R/G/B to 230 or under, depending on what you like. If you want to add a black outline (as suggested by kplo), you can then click on the effects tab...click the Draw Outline checkbox, change the color to black and adjust your feather and width according to your needs.

I also edit in FCP from time to time, and the white titles default to maximum white as well, which is stupid considering that it's automatically outside of legal broadcast standards.

Thanks for all your help, all is corrected now.
