Just bought an HV30 and it is supposed to be capable of 1080 60i. I have poured over the manual and can't find how to set it for 60i, or any mention of that capability. Anyone know?

Shouldn't it already be set for 60i?
Otherwise, enter the main menu system and I think it's on the 1st page.
(you have to enter the "function" menu first, then select main menu from that)

Press "FUNC"
Using the joystick scroll down to the last Icon on the screen
Press in joystick
Scroll down to the second listing "Named REC/IN SETUP
Scroll to the right to "HD Standard" press in the joystick
Your selection should be one of the many here

HDV
HDV (PF30)
HDV (PF24)
DV Wide
DV normal
Where is 60i? I assume the "HDV" setting is 30fps.

Yes, that's it. 60i is 30fps. The PF30 setting is 30p.

I don't know about final cut but using vegas I first interpolate 60i video to 60p than put it on 24p timeline and slow it to %40. This gives me a clean slow mo.

Is this (interpolating to 60P) done by just de interlacing the 60I footage, or is there more to it?

When you just deinterlace the 60i video you will get 30p video. You have to set your output as 60p so that it will interpolate 60i video to 60p.

When you de-interlace you produce progressive video. You can either use blend the fields method which basically blends two half (interlaced) frames and makes it a full progressive frame or interpolation which uses algorithms to make logical guesses about what may the other half of the frame look like. When you go from 60i to 30p there is no need for interpolation. You can just blend the fields. But from 60i to 60p you have to interpolate.
