What is the best way to take out the orange on an airsoft gun? Chroma Keyer or Color corrector 3 way?

Kinda depends on the shot... i.e. how big it is in frame, etc. Post a still please.

pick up the DV Rebels Guide by Stu Maschwitz. there's a great section on this very technique.

Can be done in FCP, but Would be easier in After Effects or Motion.

Create a mask around the orange, keyframe/track it's position to follow the orange tip. Use a Change to Color effect and make it black.

If you haven't shot yet, black tape works well as long as you don't shoot a close up of the tip. Otherwise, as long as there is no other orange in the shot, use the Secondary Color Correction in FCP.

I had a character that was in two back-to-back scenes, so I changed the color of his shirt so it wouldn't be so obvious.

You might look into this book (http://www.amazon.com/Apple-Pro-Training-Advanced-Correction/dp/0321335481/ref=sr_1_1?ie=UTF8&s=books&qid=1238461781&sr=1-1). It will teach you how to use your color correctors in FCP.

I'd say 3-way color correct using the limit effect. Orange color in video is usually quite strong, so it should be easy color picking it and either desaturating it or change the color. If it's DV or HDV material, then it has very blocky chroma in the red channel that requires softening and careful adjustments.
