White balance is a great feature of video, I love it. But if I wanted to shoot as if it were film, and force myself to manually fix the color (with gels and filters), is there a setting I could put it on to where it would react to light like film? Where flourescents look green and tungstens look orange, etc.

Just throw the white balance into the Preset mode, and from there you can toggle between 3.2K (Tungsten) or 5.6K (Daylight), which are the two grades of stock you deal with in the film world. That way, it's all up to you.

Yes and no
Setting your camera to 56k and shooting in daylight will make any tungston lights yellow/orange depending on their color temp. You can get kinos that are 2900 as well.
Vice versa with 32k.
But you can't emulate the way film reacts to every day, run of the mill flo lighting.
I'm guessing the emulsion of film or some chemical reaction is what causes flo's to react to light... the film sees the green and records it whereas a video camera can mask the green enough to not give you the film flo look a la Paris Texas.
