Is there a way to get a numeric value appear on the display for colour temperature after manually performing a white balance. 3400K or 5600K whatever it may be? As it stands I'm trusting that the camera has performed the operation without a real visible confirmation. Any insight? Perhaps I'm missing a readout someplace on the display...

The HVX doesn't have a numerical read out for the color temperature. I use the 8" Panasonic HD field monitor to check my image if the situation seems uncertain.
The HVX has a reliable manual white balance. Too bad the on board LCD doesn't accurately reflect the pretty pictures one can make with that camera.

No, but it would be a nice thing to add to the wishlist!
If you get close, you can always tweak it the rest of the way in post. 4:2:2 does really well in color grading.
The colors in the display are the only visible confirmation, but frankly the display is not very reliable and I miss the numbers as well.
Just recently had a colleague ask me "what temp are you shooting at?" (he saw me using a 1/2ctb on the light and probably worried about his color temp).
I said "sorry, I can't tell, I suspect something like 4000K"
I felt really stupid and unprofessional (in addition to the fact that the other guy was shooting on a DigiBeta with a Canon broadcast wide-angle...)
