Sony HVR Z1E tips needed

I am using a Sony HVR Z1E and having trouble fully grasping all the manual settings? I think I am doing something wrong with the iris and gain relationship? I am working in HD now but previously just been a shoot and run on auto so feel a bit out of my depth and at a loss, as the footage is turning out really grainy?? I have been testing different setting but now feel lost, anyone got any advice as to how come I am getting grain footage even in a three light set up?

You need lots of light to avoid grain. Lots.

Try shooting outdoors; you'll see the difference.
