i was curious if anyone knows if the canon can be set to shoot like every hour?

I haven't heard of anything like that in camera. It might be possible using some sort of software to control the camera on a computer that would signal the camera to take a photo

yes, with an intervalometer like the canon tc80n3. the camera itself cannot shoot timelapse.

you may want to check out the Pclix LT100 as it can be used with different brands not just canon...
there are also a lot of different software solutions for timelapse if you don't mind being tethered to a laptop.

I do timelapse all the time with Canon EOS viewer/capture utility running on a laptop. Can do 1 to 1999 shots, minimum 5 sec interval, max 2 hours. I have used Canon EOS-1D or Ds bodies. If you run the utility on a Mac, the 1999 frame limit does not apply for some reason.
New Nikon D300 has a buit-in intervalometer, every camera should have one. Maximum number of shots is 999. No laptops needed. My favourite.
