Why does it always show 4 audio tracks when using FCP ? can this be disabled ?

Because four audio tracks are always recorded in DVCPRO HD. It's in the footage.

By default it only records on the first 2 tracks right ?

It always records four. But if you don't have anything assigned to channels 3 and 4, they'll be blank.
If you use the XLR ports and assign channels 1 and 2 to them, channels 3 and 4 will be the internal microphone. The internal microphone is always recorded no matter what, whether it's on channels 1/2 or channels 3/4.

When you ingest the clips into FCP, you can turn off the tracks you don't need.
Select all the P2 clips you are about to ingest, then go to "Capture Settings" and
select the audio tracks, the hit the "Apply to all Selected Clips" button.
Voilą! No wasted disk space.
