can you achieve a shallower DOF with the century optics or lower end brand adapters and still get a nice focus on whats in the foreground? I know that the century optics 2x will give you about 110mm telephoto on the 55mm hvx. has anyone used this and if so what brands have you used.

If you want to reduce DOF, you want a 35mm adapter, not a 2x lens adapter. There's no way you could use 110mm inside most buildings and get any sense of a set at all. It's a nice thing to have in a kit for outdoor work, especially nature or sports. Indoors you can get plenty of background softness with 55mm and smart blocking.

Adding glass in front of the lens will reduce sensitivity and sharpness, too.
