Very simply.
I am shooting a feature doc. on the HVX200, to firestore. I will offline at low res in Final Cut Pro but my delivery requirements may well include a 35mm print, or at the very least an HD master. Do I lose any image quality by recording in QT as opposed to P2? i.e. should I record in p2 then convert to low-res QT for my offline?

Why do you need OFFLINE on Final cut Pro? Would it make more sense to edit in Native DVCproHD? Or are you off-lining to Pro-Res?

As stated above there's no real point to offline editing with DVCPROHD. It edits as easily as DV. Saves a heck of a lot of time just onlining from the beginning.
No difference in quality whether shooting QT or P2.

Maybe I'm missing something, but here in Ireland online costs in the region of €250+ per hour. Perhaps I am using the wrong terminology.

What the people here are saying is that "off-lining" is when you create a low-res clone of your footage, edit that, then re-connect the clips to the Full Res clips, thus making it "online". This is done when the Full Res clips cannot be edited natively, and is done to save time... (forgive me if I left out a step or used improper terminology, I've never really had to do an offline edit)
DVCPROHD can be edited with no problem on most Modern FCP systems, so no need to offline, as it would be an unneeded step and would actually take up MORE time.
