If I connect via FireWire to a Macbook Pro and either record directly to the mac or transfer existing DVCPRO HD content, will it place the same files on the mac as it would if these files were ingested through Final Cut Pro?

The files recorded on the Mac are dependent on the codec you decided to capture. The HVX200 records MXF files which when you ingest in FCP are wrapped in a Quictime .mov DVCPRO-HD files. If you capture using that codec the Mac will create the same files, as If you were ingesting them from P2 or an offloaded disk
I would definitely recommend using ProRes to capture.

Not certain what exactly your workflow is when you "record directly to the mac . . . ."
If you use Scopebox or HD Monitor, and have the DVCProHD codecs installed then anything that streams out firewire from the HVX200 will be recorded to the DVCProHD QT format.
