So, I would like a wider angle of view than what is given by default on the HVX200, at least for some of my shots. This is where a 0.75x from 16x9 seems to come into play. My question is, if I also want greater DOF control, aka needing a 35mm adapter, can I use both at the same time? How does that work? Also, which adapter would "thread" on to the 16x9 0.75x

In that situation, you would not use the wide angle glass from 16X9. Your FOV would be given by the length of the lens on the 35 adapter, so you would calibrate the HVX to shoot the 35 adapter, as usual, then use a wide angle, such as an 18mm, or 12mm, etc. on the adapter.

Thanks, Andrew. Do you recommend any 18mm/12mm wide angles?

As a note, once you get down to 12mm you're starting to get into the very low hyperfocal lengths and won't get much DOF even with a 35mm lens adapter, unless your subject is super close.
